Recipe: Basil Artichoke Pesto

This is a pretty simple pesto I tweaked. I had some jarred artichoke that was about to see better days, so it needed to be used stat. Here at my house we use pesto for all sorts of stuff. We do make your own pizzas (pesto sauce) with our boys, we use it instead of red sauce for pasta; we love pesto!

So here it is:

basil_pesto2 cups basil
1/2 cup pecans (you can sub walnuts or pine-nuts)
1/2 jar (3 oz) Cento artichoke hearts
1/2 cup nutritional yeasts
1 clove(s) fresh garlic (use another clove if you LIKE garlic)
1/4 – 1/2 cup EVOO
salt to taste (I used pink Himalayan salt)

Now, the simple part. Add it all to your food processor. I have a Ninja so I pulsed the mixture a few times until I was happy with the consistency. Chill and serve!
