Recipe: Chickpea Salad

Super simple, not a ton of extra over the top ingredients. Tasty as heck though and packed with all sorts of nutrients. I cook my recipes to make 3-4 servings roughly, they are for my work lunches, so keep that in mind.

preplunchWhat you will need:

1/2 pound of dried chickpeas
1/4 cup frozen onion
1/2 cup frozen pepper medley
1 cup frozen collared greens

In 6-8 cups of boiling water, rehydrate the chickpeas for about 45 minutes.

Using olive oil or vegan butter (I used Earth Balance), saute the onions. After they’re a nice caramel color add the peppers & saute a bit longer until they are soft. Add the collared greens and a half cup of water. Let the greens soften and let most of the water cook off and you are done. Season to taste with a little pepper and sea salt.

Makes 3 servings
